Apple cinnamon streusel cake

One of the cakes my mom and I used to bake all the time was the ‘apple cake’ (Torta di mele). This is an elevated version of it, bringing a modern twist to the nostalgic flavors.

Filling

  • All-Purpose Flour 240g
  • Granulated sugar 190g
  • Eggs, 2 large
  • Vegetable oil 95g
  • Sour cream 230g
  • Baking powder 6g (1 teaspoon)
  • Baking soda 3.5g (1/2 teaspoon)
  • Salt 2.3g (1/2 teaspoon)
  • Vanilla extract 2.5g (1 teaspoon)
  • Apples, 450g peeled and sliced
  • Granulated sugar 90g
  • Apple cider 40g
  • Apple pie spice 2.5g (1 teaspoon)
  • Instant ClearJel 10g (can substitute with cornstarch)

Streusel

  • All-purpose flour 150g
  • Granulated sugar 120g
  • Cinnamon 1.2g (1/2 teaspoon)
  • Vanilla extract 1.2g ( ½ teaspoon)
  • Unsalted butter 110g
  • Salt 1g (1/4 teaspoon)

Instructions

  1. Make sure all the ingredients are at room temperature.
  2. Prepare the filling: in a small bowl combine the sugar, apple pie spice, and ClearJel. Place the apples and cider in a pan, then add the dry ingredients. Stir into the apples and cook over medium heat for 10 to 15 minutes, until the apples are tender. Remove from the heat and let cool down.
  3. Prepare the streusel: in a small bowl combine all the dry ingredients. Melt the butter and add to the dry mixture. Mix until it becomes crumbly and set aside.
  4. Preheat the oven to 180°C (350°F). Grease a 9” x 13” pan (approximately 23x33cm).
  5. Prepare the cake. Beat together at high speed the eggs and sugar until very light and airy. Reduce the speed and add the vegetable oil and vanilla extract and mix until incorporated.
  6. In a separate bowl sift the flour, salt, baking powder and baking soda.
  7. At low speed, add the dry ingredients to the egg mixture, alternating with the sour cream. Mix just until incorporated.
  8. Pour the batter into the pan and spread the apple mixture over the batter. Top with the streusel.
  9. Bake the cake for 40-50 minutes, until a tester inserted in the center comes out clean.
  10. Remove from the oven and let cool on a rack. Cut the cake in squares, dust with confectioner’s sugar and serve directly from the pan.
